  2. 1 Teaspoon(s) Apple cider vinegar

  3. 3/4 Cup(s) canola oil

  4. 1 Teaspoon(s) Vanilla

  5. 1/2 Teaspoon(s) Almond extract

  6. 1 Cup(s) Flour

  7. 1/3 Cup(s) Cocoa powder

  8. 3/4 Teaspoon(s) Baking soda

  9. 1/2 Teaspoon(s) Baking powder

  10. 1/4 Teaspoon(s) Salt

  11. 3/4 Cup(s) Sugar

  1. Preheat oven 350 degrees.

  2. Line a muffin pan with paper cupcake liners.

  3. Whisk together soy milk and vinegar'; set aside.

  4. Mix oil, vanilla and almond extract; add to soy/vinegar mixture. Whisk until foamy; set aside.

  5. Mix flour, baking powder, baking soda, salt and sugar and add to wet mixture.

  6. Put into muffin pan and bake for 18-20 minutes.

  7. If you are serving for Halloween, decorate with colorful icing and Halloween candy.
