  1. 310g peeled and diced potatoes

  2. 65g diced carrots

  3. 60g diced celery

  4. 4 tablespoons chopped onion

  5. 1 teaspoon salt

  6. 50g butter

  7. 475ml milk

  8. 4 tablespoons plain flour

  9. 2 1/2 (340g) tins sweetcorn, drained

  10. 280g grated Cheddar cheese

  1. Place potatoes, carrots, celery, onion and salt in a large pot with water to cover. Bring to the boil, reduce heat and simmer 20 minutes.

  2. Meanwhile, combine butter, milk and flour in a small saucepan over medium-low heat. Stir constantly until smooth and thick.

  3. Pour milk mixture into cooked vegetables. Stir in sweetcorn and cheese until cheese is melted. Serve.
