  1. BURGERS:

  2. 1 1/2 lb ground chicken

  3. 1/2 cup panko or whole wheat bread crumbs

  4. 1 tbsp lime juice

  5. 1 tbsp chopped cilantro

  6. 2 tsp. fresh ginger , grated

  7. 1 tsp hot sauce (like Sriracha)

  8. 1 clove garlic , minced

  9. 1/2 cup chopped red bell pepper

  10. 4 whole wheat buns

  11. COLE SLAW:

  12. 1 bag coleslaw mix (or 4 or 5 cups grated cabbage /carrot)

  13. 1 cucumber , peeled seeded and coarsely grated

  14. 1 tbsp cilantro , chopped

  15. 1/4 cup natural peanut butter

  16. 1/4 cup rice vinegar

  17. 2 tbsp lime juice

  18. 1 clove garlic , chopped

  19. 1 tbsp fresh ginger , minced

  20. 1 tbsp hot sauce (or to taste)

  21. 1 tbsp honey

  22. 1 tsp toasted sesame oil

  23. 1/4 cup peanut oil

  24. Dash sot sauce

  25. salt & pepper

  26. 1/4 cup coconut milk

  27. 1/2 cup peanuts , chopped

  28. cilantro for garnish

  1. For Cole Slaw:

  2. Combine everything except cole slaw mix, cucumbers, peanuts and cilantro for garnish in a blender. Blend until smooth (you can drizzle oil in while processing if you like - I forgot to and it still worked fine!)

  3. Pour over slaw and cucumbers and toss to coat. (You can refrigerate if making ahead)

  4. Garnish with additional cilantro and peanuts before serving.

  5. For Burgers:

  6. Combine everything together and shape into patties.

  7. Preheat oiled grill or pan over medium-high heat; place burgers on grill and reduce heat to medium. Cook about 3-4 minutes each side, or until done.

  8. Place burgers on buns. If desired, top with some of the spicy peanut slaw as a garnish.
