  1. 1 lb beef, sliced into about 1/4-inch thick (I use chuck roast here)

  2. 5 tablespoons oil

  3. 3 kaffir lime leaves, thinly shredded

  4. 16 oz coconut cream (or coconut milk)

  5. 1 tablespoon palm sugar (or sugar)

  6. 1 tablespoon fish sauce

  7. fish sauce, salt and sugar to taste

  8. Panang Curry Spice Paste:

  9. 1 tablespoon oil

  10. 1 tablespoon water

  11. 2 1/2 tablespoons chili powder

  12. 1 teaspoon coriander powder

  13. 1 teaspoon cumin powder

  14. 1 teaspoon salt

  15. 1/2-inch galangal, chopped

  16. 1 lemongrass (use white part only), cut into 2-inch length

  17. 1 tablespoon cilantro stems (or roots)

  18. 2 shallots

  19. 2 clove garlic

  20. 1 1/2 tablespoons red-skin roasted peanuts

  21. 1 teaspoon shrimp paste (or Belacan)
