  1. 1/2 cup salt

  2. 2 tablespoons brown sugar

  3. 2 pounds pork belly

  4. 1 cup cantaloupe , roughly chopped

  5. 1 cup honeydew , roughly chopped

  6. 2 ounces tequila

  7. 2 ounces orange juice

  8. 1/2 ounce agave nectar

  9. 2 tablespoons granulated sugar

  10. 1 bay leaf

  11. 2 pounds pork shoulder

  12. 1/2 head green cabbage , thinly sliced

  13. 1/2 head purple cabbage , thinly sliced

  14. 2 pounds roma tomatoes , diced

  15. 1 ounce freshly squeezed lime juice

  16. 2 tablespoons dry oregano

  17. 1/2 pound cotija cheese

  18. 1 16-ounce container sour cream

  19. 24 corn tortillas

  1. Directions:

  2. For Pork Belly:

  3. Combine a mixture of half the amount of salt and all of the brown sugar.

  4. Rub mixture generously on pork belly and refrigerate overnight.

  5. Rinse off with cold water.

  6. Place in smoker at 280 degrees for six hours, basting every hour with tequila glaze.

  7. Remove, cool and dice.
