  1. 1/2 kg prawns (deveined and shelled)

  2. 1 tsp chili powder

  3. 1/2 tsp turmeric powder

  4. clarified butter /unsalted butter

  5. 2 cups thinly sliced onions

  6. 3 tbsp ginger garlic paste

  7. green chili paste- depends how much you want to add

  8. 2 tsp coriander powder

  9. 1/2 cup water

  10. juice of half a lime

  11. handful of chopped cilantro

  12. handful of chopped mint leaves

  13. 2 tsp spice Mix (ingredients listed below)

  14. spice Mix: (Grind the following into a fine powder)

  15. 1/2 tsp fennel seeds

  16. 1/2 tsp cumin seeds

  17. 1'2 tsp caraway seeds

  18. 1 cardamom

  19. 1" cinnamon

  20. 1/4 tsp grated nutmeg

  21. 1 whole mace

  22. For the Rice:

  23. 2 1/2 cups basmati rice

  24. 5 cups water

  25. 2 cups thinly sliced onion

  26. salt to taste

  27. clarified butter /Unsalted butter

  1. For the Rice:

  2. Boil water, add rice with the remaining ingredients. Bring to a boil then simmer for 10 mins. Fluff the rice with a fork once it's done.

  3. For the Prawns:

  4. Marinate the Prawns with the turmeric and chilli powder and refrigerate for 20 mins.

  5. Heat the butter in a pan and fry the Prawns till they turn slightly brown. Remove from the pan.

  6. Add sliced onions to this pan and fry till brown, add ginger-garlic-chili paste to this and fry till the raw smell of the ginger/garlic disappears.

  7. Add coriander powder and stir into this mix.

  8. Add 1/2 a cup of water and salt to taste.

  9. When this gravy begins to thicken add the fried prawns, lime juice, cilantro, mint and the spice mix (reserve a 1/4 tsp for later)

  10. Stir well and remove from heat.

  11. Layering the dish:

  12. Add 2 tbsp of butter to a deep dish.

  13. Layer half the rice over the butter followed by the Prawns. Sprinkle the 1/4 tsp of Spice Mix you had reserved earlier. Spread the remaining rice over the prawns.

  14. Drizzle a little melted butter over the rice.

  15. Cover with a lid or aluminium foil.

  16. Put this dish in a preheated oven at 350F for 30 mins/ simmer on a stove top for 20mins.

  17. Serve hot!
