  1. 4 cups coarsely chopped onions

  2. 2 tablespoons peanut oil

  3. 2 garlic cloves minced

  4. 1 teaspoon grated fresh ginger

  5. 1-1/2 tablespoons ground cumin seeds

  6. 1-1/2 tablespoons ground coriander seeds

  7. 1-1/2 teaspoons cinnamon

  8. 1 teaspoon turmeric

  9. 1/2 teaspoon cayenne

  10. 1/2 teaspoon ground fennel seeds

  11. 1/4 teaspoon black cardamom

  12. 1/4 teaspoon ground cloves

  13. 2 medium zucchini quartered and sliced

  14. 1-1/2 cups water

  15. 1 cup green beans

  16. 2 firm tart apples cored and cubed

  17. 1/2 red bell pepper

  18. 1 cup chopped dried apricots

  19. 1/2 cup raisins

  20. 1/2 cup strawberry conserve

  21. fresh lemon juice

  1. Sauté onions in peanut oil for 10 minutes.

  2. Stir in garlic, ginger and curry spices then continue to sauté stirring constantly for 3 minutes.

  3. Add zucchini and water then stir well so spices won't stick to the pot.

  4. Cover and simmer 10 minutes then mix in green beans, apple, peppers and dried apricots.

  5. Simmer gently covered for 30 minutes.

  6. Stir occasionally and add a little more water if needed to prevent sticking.

  7. When fruit and vegetables are quite tender stir in raisins, conserve and lemon juice.

  8. Serve on a bed of rice topped with nuts and banana.
