  1. Ingredients :

  2. 500g Pumpkin peeled, de-seeded and diced

  3. 200g homemade breadcrumbs (4 slices of stale/toasted bread)

  4. 150g Squash peeled and diced

  5. 2 Large fresh carrots diced

  6. 1 Cooking apple peeled and diced

  7. 50g Fresh mint

  8. 50g Fresh coriander

  9. Rosemary stem (1tsp chopped leaves)

  10. 1 Table spoon of Soya butter

  11. 500ml Soya milk

  12. 1 Large onion (whole)

  13. 2tsp turmeric

  14. 1 tsp Paprika

  15. 1 tsp chili seeds

  16. 1 tsp Thai spice

  17. 3 tsp Olive oil

  18. 1/2 Lime

  19. 3 Garlic cloves squashed

  20. 1 1/2 Kg Potatoes

  21. 1 Bay leaf

  22. Pinch of grated Nutmeg

  23. Salt and pepper to taste

  24. This recipe is made up 3 layers:

  25. diced pumpkin with cream sauce;

  26. mash potato;

  27. homemade breadcrumbs

  28. Prepare crumble cream sauce:

  29. Chop apple, pumpkin, squash and carrots into small cubes of 2x2 cm thick and put in large bowl.

  30. 1/2 lime juice, squashed garlic and season with salt and pepper. Leave for 5 minutes.

  31. To a hot large deep pan, add the olive oil and the marinated cubes.

  32. Add to the pan a whole onion (yes, whole not diced). To add sweetness.

  33. 1 tsp chilli seeds. Stir for 5 minutes on low heat.

  34. Take off the heat and discard the bay leaf.

  35. Remove the whole onion and blend it with remaining soya milk.

  36. Add onion milky sauce back to the pan and on medium to low heat.

  37. Stir regularly for 10 minutes until sauce thicken slightly.

  38. Do not allow sauce to stick the pan. Add 50 ml water if necessary.

  39. Check

  40. seasoning and take off the heat once vegetables are soft the the

  41. bite. But not to soft, allow for baking time.

  42. Leave to one side.
