  1. 3 pounds chicken (bone-in, cut up)

  2. 1 cup lime juice

  3. 2 medium onions (peeled and chopped)

  4. 4 garlic cloves (peeled and minced)

  5. 16 ounces (1 pound) calabaza pumpkin or butternut squash (peeled and cubed)

  6. 2 turnips (peeled and chopped)

  7. 2 carrots (peeled and chopped)

  8. 1/ cup shredded cabbage (or use the green tops of the turnips, or spinach)

  9. 1 chayote (peeled, de-seeded, and chopped)

  10. 2 1/2 quarts chicken stock (or water, or vegetable stock)

  11. salt and fresh ground pepper to taste

  12. 1 whole Scotch bonnet pepper

  13. 1/2 cup cooked plain rice (or wild rice)

  1. Rinse the chicken with water and then rub with lime juice. Place the chicken pieces into a soup pot. Add the chopped onions, minced garlic, calabaza pumpkin chunks, cut up turnips, carrot chunks, shredded cabbage (or turnip greens), chayote cubes, and chicken stock.

  2. Bring the soup to a boil and then reduce the heat to a medium low flame bringing the soup down to a simmer. Allow it to simmer for 45 minutes, then add the salt, freshly ground pepper, and whole Scotch bonnet pepper. Do not break or prick the pepper, unless you want a really hot and spicy soup.

  3. Continue to simmer the soup until the chicken is cooked through. This will take about another 30 minutes.

  4. Turn off the heat. Remove the chicken only from the soup and allow it to cool. Once the chicken is cool enough to handle, remove the meat from the bone and shred it with two forks or your fingers. Discard the bones.

  5. Put the shredded chicken back into the soup pot, add the cooked rice, and re-heat the soup until it is hot enough to serve. More Chicken Soup Recipes:
