  1. 2 cups self-raising flour

  2. 3 wholegrain Weet-Bix biscuits, crushed

  3. 1 large ripe banana, mashed

  4. 2 eggs, beaten

  5. cup brown sugar

  6. cup vegetable oil

  7. cup choc chips or sultanas

  8. cup milk

  9. cup desiccated coconut

  1. Makes 16 Preheat oven to hot, 200°C. Lightly grease an 18cm square cake pan.

  2. In a large bowl, combine flour, Weet-Bix, banana, eggs, sugar and oil. Mix well. Stir choc chips and milk through. Spread mixture into pan. Sprinkle with coconut.

  3. Bake for 20-25 minutes, until lightly golden. Cool in pan and slice. Store in an airtight container.
