  1. 400g good-quality tinned tuna

  2. 6 tinned water chest nuts , drained and finely sliced

  3. 3 spring onions, trimmed and sliced

  4. 3cm piece of fresh root ginger, peeled and grated

  5. 3 tbsp chopped coriander

  6. 1 red chilli, deseeded and finely chopped

  7. 3 kaffir lime leaves, finely chopped (rehydrated for 5 minutes in boiling water if dried)

  8. 2 tsp Thai fish sauce

  9. 2 egg s, beaten

  10. Vegetable oil, for frying

  11. Sea salt and freshly ground black pepper

  12. Good pinch of caster sugar

  13. 2 tbsp Thai fish sauce

  14. 1 tbsp rice vinegar

  15. Juice of 1/2 lime

  16. 2 tbsp chopped coriander
