  1. 1 T. oil

  2. 1 medium onion, chopped

  3. 2 garlic cloves, minced

  4. 1 - 2 tsp. grated or minced, fresh ginger

  5. 1 T. curry powder (or to taste)

  6. 3/4 c. red lentils (175 g.)

  7. 1 3/4 c. vegetable broth (400 g.)

  8. 1/4 c. unsweetened, flaked coconut

  9. 3/4 c. coconut milk (or use one, 5 1/2 oz. can)

  10. Lime juice to taste

  11. Sambal Oelek or red pepper flakes to taste

  12. 3 - 4 cups hot, cooked rice

  13. **Garnishes**

  14. Chopped cilantro

  15. Coconut flakes

  16. Peanuts

  17. Chutney

  18. Sliced bananas or oranges

  1. Sauté onion in hot oil until translucent. Add garlic, ginger and curry powder and cook another minute, being careful not to burn the spices.

  2. Add lentils which have been picked over (to remove rocks or other debris) and rinsed.

  3. Add the broth and bring to a boil. Reduce heat and simmer with a lid, until lentils are soft, 30 to 40 minutes. If the lentils are old or you live at a high elevation, this may take a little longer.

  4. Stir in coconut milk and heat through. You can bring it to a gentle boil, but it does not benefit from long cooking.

  5. Season with lime juice and Sambal Oelek, red pepper flakes or other hot sauce if you like it spicy. Sambal Oelek is the name of a condiment available in US grocery stores. It is ground up chili peppers in vinegar and can be very spicy.

  6. To buy Sambal Oelek Stir in coconut flakes, if you wish.

  7. Serve over rice. Basmati rice is very nice with this dish.

  8. I like to serve it with little dishes of garnishes set out, so everyone can pick what they like on top of the lentils.

  9. I also like to simmer chopped carrots and celery with the lentils, to complete the meal. Other delicious vegetables would be fennel, yam or sweet potato, or zucchini added towards the end of cooking time (so it does not become mushy).
