  1. for 2 racks of baby back ribs:

  2. 2 trimmed racks of baby back pork ribs

  3. For the rub:

  4. 1 tbsp fennel seed, crushed fine

  5. 1 tbsp freshly ground black pepper

  6. 1 tbsp garlic salt

  7. 1 tbsp sugar

  8. 1 tbsp kosher salt

  9. 1/2 tsp cayenne or to taste

  10. For the glaze (simmer until reduced by half):

  11. 1/3 cup brown sugar

  12. 1/3 cup orange juice

  13. 1/3 cup rice wine vinegar

  14. 2 tsp hot chili sauce or to taste

  15. 1 tbsp orange zest

  16. 275 degrees F. for 2 1/2 to 3 hours or until

  17. fork tender.

  18. - Cut, coat with glaze, and finish in a hot 425 degrees F. oven

  19. until caramelized.
