  1. Take 1 cup rice and cook in pulav style (add 1 stick of cinnamon, 6 cloves, 3 cardamom, 4 bay leaves) Cook the rice - (soak first for 30 minutes) with 1 tsp salt and 2 tsps of oil /ghee so that it doesnt stick.

  2. Wash palak leaves and roughly chop. Cook the palak in microwave for about 5 mins without adding any water. The water in the leaves when washed should be sufficient. Wait for 3 mins and then remove. Let it cool a little. After it cools down, make a fine paste in the blender.

  3. Saute the onions in oil and ghee (mix oil and ghee for additional taste) till golden brown. Add the garlic, and fry, then add cashews. After cashews are roasted, add dessicated coconut flakes.

  4. Add the tomatoes, green chillies turmeric, red chilli powder, salt and saute till the tomatoes are cooked.

  5. Now add the pureed palak and just bring to a boil. (It will not take too much time). As soon as it comes to a boil reduce heat to very low. (Check for salt, since you added to the pulav rice which has already been cooked, you may want to reduce it in the palak..see how it tastes) 6) Mix the palak and the cooked rice well, make sure it mixes well in very low heat. Quickly turn off heat and make sure the rice doesnt stick to the bottom of the pan.
