  1. 2 tablespoons olive oil

  2. 1 tablespoon white vinegar

  3. pinch salt and pepper

  4. 1/4 teaspoon ground cardamom

  5. 1/4 teaspoon ground cumin

  6. 1 teaspoon fennel seeds

  7. 2 cups cooked black beans (washed, rinsed and drained)

  8. 1/2 cup grated fresh coconut

  9. 2 green onions, chopped

  10. 2 tablespoons fresh fenugreek leaves, finely chopped

  11. 1 tablespoon lime juice

  1. Toss everything together in a large bowl. Serve chilled.

  2. Note: Substitute chopped parsley for the fresh fenugreek.
