  1. Loin or rib pork chops - 2 (1-inch thick)

  2. Packaged dry bread crumbs - 2 tablespoons

  3. Salt 3/4 Teaspoon

  4. Pepper 1/4 Teaspoon

  5. Butter/Margarine 3 Tablespoon

  6. Sweet-and-sour red cabbage - 1 jar (1 lb) , drained

  7. Tart red apple - 1/2 , sliced

  8. Red wine 1/4 Cup (16 tbs)

  9. Currant jelly 2 Tablespoon

  10. Salt To Taste

  1. Directions GETTING READY 1 Using damp towels, wipe chops.

  2. With edge of saucer, pound chops on both the sides , to flatten.

  3. In a bowl, mix bread crumbs with 3/4 tea spoon salt and the pepper.

  4. Coat the chops evenly on each side with the mixture.

  5. MAKING 5 In a medium skillet, heat butter and brown pork chops, turning on each side, until golden-brown for 15 to 20 minutes.

  6. Remove pork chops. Retain 1 tablespoon of fat, drain off the rest.

  7. In the skillet,to the remaining drippings add red cabbage, apple, wine, currant jelly and salt to taste; mix well.

  8. Bring just to boil; place pork chops on top of red-cabbage mixture.

  9. Cover and simmer for 20 minutes.

  10. SERVING 10 Serve hot.
