  1. 1 medium onion

  2. 100ml single cream

  3. 1kg potatoes, peeled and very thinly sliced

  4. 2 garlic cloves

  5. 2 tablespoons vegetable oil

  6. 3 rashers bacon, cut into thin strips

  7. 300ml milk

  8. 50g grated Comte or Gruyere cheese

  9. salt and pepper to taste

  1. Heat 1 tablespoon oil in a frying pan over medium heat. Saute onion and garlic until tender. Add bacon and fry for a few minutes. Drain the contents of the frying pan onto some kitchen towels and set aside.

  2. Preheat the oven to 180 C / Gas 4.

  3. In a large bowl, toss together sliced potatoes, salt, pepper, onions, garlic, bacon and milk. Pour into a well-greased baking dish. Pour in the cream and sprinkle with cheese.

  4. Bake in preheated oven for 45 minutes or until golden brown and tender. Serve hot from the baking dish.
