  1. 5 tilapia fish filets

  2. 1 tsp chilli powder

  3. 1 tsp turmeric powder

  4. 1 tspp cumin powder

  5. masala vegetables

  6. 2 tbs butter

  7. 2 tbs garam masala

  8. a handful of raw cashews

  9. 1 red onion , peeled and sliced into thin rounds

  10. 3 serrano green chilies chopped

  11. 1 thumb-size length of ginger , peeled and chopped

  12. 4 cloves garlic , peeled and chopped

  13. 1 tomato diced

  14. 1/2 cup green peas

  15. 4 leaves of kale sliced into strips

  16. 3 small purple potatoes

  17. rice

  18. 3 cups basmati rice

  19. 1 tbs butter

  20. 2 cloves garlic , smashed

  21. 1 red onion , peeled and chopped

  22. 5 cm stick cinnamon

  23. 2 cardamom pods the green ones

  24. 5 -6 cloves

  25. 1 tsp saffron threads

  26. 1 tsp sea salt

  27. 3 cups unsalted stock or water

  28. 1/2 cup of equal parts chopped mint and cilantro

  29. Garnish

  30. 4 tbs yogurt

  31. Fried red onions

  32. fresh cilantro leaves

  1. Fish: Heat oil in a wok and brown the chopped onion, garlic and ginger. Add a little water to the spice powders to make a paste and fry over a moderate fire till fragrant.

  2. Add salt . Turn the fish until firm and browned and remove from the wok save any leftover oil to flavor the rice. set fish aside.

  3. Rice: Wash and drain the rice. in a rice cooker add the reserved butter and rice grains. Pour stock over the rice. Add salt, saffron threads and 1/2 cup of equal parts chopped mint and cilantro stir to evenly distribute spices etc.

  4. Set rice cooker program for white rice and cook till the cooker beeps.

  5. while the rice is cooking combine and stir fry the masala vegetble ingredients until they are toasted and the spices are evenly distributed.

  6. when the rice is done fluff the rice and get an oven safe pot.

  7. layer the rice then the fish then rice then the veggies, then the rice. until everything is in the pot.

  8. bake for 30-40 minutes at 350.

  9. remove the layers into separate serving dishes ie rice, fish, veggies.

  10. serve with fried red onions and yogurt on the side.
