  1. 1/2 kg mutton paya ( wash and cut into pieces)

  2. onions (thinly sliced)

  3. 1 piece ginger

  4. 8 garlic flakes (smashed)

  5. 1tsp fennel seeds

  6. 1/2tsp coriander seeds

  7. 1/2tsp cumin seeds

  8. 8 (green) cardamoms

  9. 1 cinnamon (stick)

  10. 2 (black) cardamoms

  11. 8 cloves

  12. 3tbsp olive oil

  13. Salt as per taste

  14. 1tsp turmeric powder

  15. 1/2tsp red chili powder

  16. 2tbsp yogurt

  17. 1 Green chili

  18. 6 cups water

  19. Ginger (thinly sliced/garnish)

  20. Cilantro leaves (garnish)

  21. 1 green chili (chopped/garnish)

  1. First put ginger, garlic and onions in blender

  2. Make a fine paste

  3. Now heating up oil in pressure cooker pan

  4. When the oil is really hot put the paya in the oil

  5. Now add the ginger-garlic and onion paste and mix it well

  6. Put salt, red chili powder and turmeric powder

  7. Mix altogether well

  8. Now put black cardamoms, green cardamoms, cinnamon, cloves, coriander seeds, fennel seeds and cumin seeds in blender and make a fine powder

  9. Now put the masala powder in it and mix well

  10. Add yogurt and mix well

  11. Cook for few minutes and keep on stirring

  12. Cook the paya till the oil separates from the masala

  13. Put a green chili

  14. Pour water and mix it

  15. Now close the lid of the pressure cooker

  16. Slow down the heat of the oven

  17. Cook the paya for 1 hour

  18. After an hour soup is ready

  19. Garnish it with thinly sliced ginger, green chili and cilantro leaves
