  1. 60g dried tamarind, chopped

  2. 500ml (2 cups) boiling water

  3. 1 large (200g) onion, chopped

  4. 4 cloves garlic

  5. 1 teaspoon finely grated fresh ginger

  6. 2 small fresh green chillies

  7. 1 tablespoon chopped fresh lemon grass

  8. 2 tablespoons ghee

  9. 5 cloves

  10. 2 cinnamon sticks

  11. 1 teaspoon ground turmeric

  12. 1 tablespoon ground coriander

  13. teaspoon ground cardamom

  14. 1 teaspoon chilli powder

  15. 1kg diced pork

  16. 1 tablespoon chopped fresh coriander leaves

  1. Combine tamarind and boiling water in small bowl; stand 30 minutes. Strain tamarind over bowl, pressing to extract all liquid; discard tamarind. Reserve liquid.

  2. Blend or process onion, garlic, ginger, chillies, lemon grass and 1 tablespoon tamarind liquid until pureed.

  3. Heat ghee in large pan; cook onion mixture, cloves, cinnamon and spices, stirring, until onion is soft and mixture fragrant. Add pork; cook, stirring, until pork is coated in spice mixture and has changed colour.

  4. Stir in remaining tamarind liquid; simmer, covered, 30 minutes. Remove cover; simmer about 30 minutes or until pork is cooked through and tender. Just before serving, stir in coriander.

  5. Serves 6.
