  1. 2 cups whole milk

  2. 4 whole star anise

  3. 6 green cardamom pods

  4. 8 whole cloves

  5. 1 3-inch piece of cinnamon stick

  6. 1 tablespoon sugar

  7. 1 1-inch piece of fresh ginger

  8. 1/2 cup water

  9. 1/2 cup sugar

  10. 3 tablespoons butter

  11. 4 thick slices of brioche or challah bread

  12. fresh peach slices for serving

  1. Put the milk, spices, sugar and ginger into a saucepan and place over medium-high heat. Bring to a boil and then turn heat to low and let simmer for 10 minutes to infuse spices. Keep warm.

  2. Put the water and sugar into a small saucepan and bring to a boil until the sugar is dissolved and turns to a clear syrup, 3 minutes. Cool slightly. Place a non-stick skillet over medium heat and add butter. When it begins to foam, dip the bread slices into the syrup and then fry them in the butter until they become golden brown, 2 minutes on each side. Pour some hot spiced milk into shallow bowls and then gently add a slice of the toasted bread. Serve with slices of fresh apricots or peaches.
