  1. Asparagus spears 24

  2. Vegetable cooking spray

  3. Margarine 1 Teaspoon

  4. Turkey breast slice 4 , cooked

  5. Whole wheat bread slice 4 , thinly sliced

  6. 1/4 cup reduced-calorie mayonnaise

  7. Minced parsley 1 Tablespoon

  8. Pimiento 1 Tablespoon , diced

  9. Dijon Mustard 1 Teaspoon

  10. Egg white 1

  1. Directions Place asparagus in a medium saucepan with a small amount of boiling water, cover and cook 6 minutes or until tender.

  2. Drain well.

  3. Coat a large skillet with cooking spray; place over medium heat until margarine melts.

  4. Reduce heat to low, and add turkey, cook 3 to 4 minutes on each side or until turkey is done.

  5. Remove from heat, and drain on paper rowels.

  6. Place one turkey slice on each slice of roast; place on a broiler pan.

  7. Arrange 6 asparagus spears diagonally on each turkey slice; set aside.

  8. Combine mayonnaise, parsley, pimiento, and mustard in a small bowl stir well.

  9. Beat egg white (at room temperature) in a small bowl until stiff peaks form.

  10. Fold mayonnaise mixture into beaten egg white.

  11. Spoon egg white mixture equally over each sandwich.

  12. Broil 3 inches from heating element 1 minute or until golden.

  13. Serve warm.
