  1. 2 tablespoons oil

  2. 1 tablespoon mild English mustard

  3. 1 tablespoon brown sugar

  4. 1 tablespoon honey

  5. 1 tablespoon apple cider vinegar

  6. Pinch each ground cinnamon and cloves

  7. 750g pork spare ribs, cut into chunks

  8. Rice, char-grilled choy sum, to serve

  1. In a large bowl, combine oil, mustard, sugar, honey, vinegar and spices.

  2. Add pork, tossing to coat. Chill, covered, for at least 30 minutes.

  3. Preheat a barbecue or char-grill on medium. Cook pork for 4-5 minutes, each side, until cooked to taste. Serve with rice and choy sum (see tip).

  4. Top tips Toss choy sum in a little oil and char-grill for 1-2 minutes until tender.

  5. You may need to finish cooking pork in the oven to prevent it from burning on the outside.

  6. Pork spare ribs may also be labelled as pork rashers.
