  1. 500 g pasta flour

  2. 6 egg yolks

  3. 2 whole eggs

  4. 2 tinned artichoke hearts

  5. 500 g jerusalem artichokes , peeled

  6. 2 garlic

  7. 2 tablespoons thyme

  8. 500 ml cream

  9. 1 lemon

  10. 2 tablespoons parsley

  11. 100g butter , melted

  12. 200 g crecenza cheese soft fresh cows milk cheese or mozzarella

  13. 50 g fresh black truffles or truffle oil , a few drops

  14. 100 g parmesan, grated

  15. salt and freshly ground black pepper

  1. Pasta dough To make the pasta, start by combining your eggs with your pasta flour one at a time in a food processor until coffee bean size balls of dough form. Turn the dough out and knead dough by hand on a floured surface until you get a smooth dough.
