  1. 4 chicken breasts , cut into strips

  2. 1 teaspoon grated ginger

  3. 1 clove crushed garlic

  4. 2 tablespoons soy sauce

  5. 1 tablespoon oil

  6. 3 spring onions , sliced diagonally

  7. 1/2 red capsicum , sliced

  8. 1/2 green capsicum , sliced

  9. 8 snow peas

  10. 2 tablespoons chopped parsley

  11. 2 tablespoons thai sweet chili sauce

  12. 1 tablespoon apple cider vinegar

  13. 2 tablespoons oil , extra

  1. Combine Chicken with garlic, ginger, and soy.

  2. Cover and refrigerate for 2 hrs.

  3. Heat Oil to medium heat and cook chicken in small batches.

  4. Set aside.

  5. Combine chicken with prepared onions, capsicums, peas and parsley on serving plate.

  6. Place chilli sauce, oil and vinegar in jar, shake well and pour over salad.

  7. Toss lightly to combine all ingredients.

  8. Serve straight away.
