  1. 1 lb 454g / 16oz Crabmeat - flaked

  2. 3/4 cup 109g / 3.8oz Cracker crumbs

  3. 1 cup 198g / 7oz Egg - beaten (large)

  4. 2 tablespoons 30ml Onion - minced

  5. 2 tablespoons 30ml Mayonnaise

  6. 1 tablespoon 15ml Worcestershire sauce

  7. 1 tablespoon 15ml Mustard - prepared

  8. 3/4 teaspoon 3.8ml Hot pepper sauce

  9. 1 teaspoon 5ml -- salt

  10. 1/2 teaspoon 2 1/2ml Black pepper - ground fresh

  11. Cracker crumbs - for dredging

  12. Peanut oil - for frying cakes

  1. In a medium bowl, mix together with fork the first 10 ingredients.

  2. Form mixture into 3-inch patties; roll in cracker crumbs.

  3. In a skillet or deep fat fryer, heat oil to 375F; fry patties until golden brown, about 2 minutes on each side.

  4. Drain on paper towels and serve immediately with sauce of choice.
