  1. 1 1/2 oz chipotle chilies in adobo sauce

  2. 1 limeís juice

  3. 1 ancho chili, seeded and minced

  4. 1 teaspoon garlic

  5. 1 teaspoon sugar

  6. 1 cup olive oil

  7. Salt and freshly ground black pepper

  1. Combine chipotle chilies, lime juice, ancho chili, garlic and sugar in a bowl. Using a pestle mash the ingredients until they form a paste. Then whisk in olive oil very gradually until emulsified. Season with salt and freshly ground black pepper to taste.

  2. Yield : About 1 cup
