  1. 2 T canola oil

  2. 2 T chopped garlic

  3. 2 T minced ginger

  4. 2 serrano chiles

  5. 2 T salted black bean s

  6. 1 red onion , roughly chopped

  7. 1 T Sambal or other chile paste

  8. 2 C peeled tomato es, chopped

  9. 1/4 C rice wine vinegar

  10. 1/2 C soy sauce

  11. 1/2 C palm sugar (substitute brown sugar )

  12. salt and pepper to taste

  1. Heat oil in a wok or skillet. Add garlic, ginger, chiles, black beans, and onions. Saute until brown, about 8 minutes.

  2. Add Sambal and tomatoes; stir.

  3. Add vinegar and deglaze the pan by stirring with a wooden spoon to incorporate any brown bits from the bottom of the pan into the sauce.

  4. Add soy sauce and sugar.

  5. Transfer to a blender or food processor; blend until smooth.

  6. Chill at least three hours (can be made the night before using).
