  1. 8 cups fresh spinach, washed & stems removed

  2. 2 Tbsp. olive oil

  3. 3 Tbsp. pinoli nuts (also known as pine nuts)

  4. cloves from 1 head caramelized garlic - See Link

  5. option: roasted red peppers

  1. Wash spinach and keep slightly wet. Pre heat sautÈ pan, add olive oil, garlic and pine nuts. When pine nuts are slightly brown, add spinach and cover quickly. Remove from the heat and let stir for 5 minutes or until spinach wilts, serve immediately. Serve with roasted red peppers, if desired.
