  1. 2 slices bacon

  2. 1 to 1 1/2 pounds pork tenderloin

  3. 1/3 cup chopped onion

  4. 1 tablespoon butter or margarine

  5. 1 can (8 ounces) tomato sauce

  6. 2 tablespoon vinegar

  7. 1 teaspoon dried parsley flakes

  8. 1 teaspoon sugar

  1. Arrange bacon slices over pork tenderloin, place tenderloin on a rack in a shallow roasting pan. Tuck thin end of meat under. Roast, uncovered, at 350° for about 25 to 35 minutes, or until internal temperature is around 160°.

  2. In a saucepan over medium-low heat, melt butter. Cook chopped onion in butter until tender; add tomato sauce, vinegar, parsley flakes and sugar. Simmer, uncovered, for 10 minutes. Serve with roasted pork tenderloin. Serve with rice or noodles Lynn Byers McClellan
