  1. 2 2 tbsp olive oil

  2. 0 1/2 tsp garlic powder

  3. 0 1/2 tsp fresh ginger root

  4. 0 1/2 tsp black pepper

  5. 0 1/2 tsp cardamom, ground

  6. 0 1/2 tsp chili powder

  7. 1 tbsp low sodium soy sauce

  8. 1 1/2 lb whole loin lean pork chops

  9. 2 tbsp distilled white vinegar

  10. 1 tbsp curry powder

  11. 1 cup chopped carrots

  12. 1 cup fresh cauliflower

  13. 1 cup fresh broccoli florets

  1. Blend oil, garlic powder, ginger, cardamom, chili powder, and soy sauce in large skillet. Add pork; stir-fry pork over medium-high heat 3 minutes.

  2. Add vegetables, vinegar, and curry. Reduce heat; simmer, stirring occasionally, until vegetables are tender. Serve over rice.
