  1. 2 White beans - drained - (15 oz)

  2. 1 cup 146g / 5.1oz Parsley - chopped

  3. 1 cup 62g / 2 1/5oz Tomato - chopped (medium)

  4. 5 tablespoons 75ml Olive oil - extra virgin

  5. 3 tablespoons 45ml Lemon juice - fresh squeezed

  6. 5 Garlic - fresh - minced

  7. 1/2 tablespoon 7 1/2ml Kosher salt - or to taste

  8. 1/2 teaspoon 2 1/2ml Fresh cracked pepper - or to taste

  1. Mix all ingredients -- taste for seasonings.

  2. Recipe may be doubled -- though be careful with the salt.

  3. Best if served at room temperature.
