  1. Organic Mocha Cupcakes:

  2. 1 1/3 cups organic all-purpose flour

  3. 1/3 cup unsweetened organic cocoa powder (Use Green and Black's or Navitas Naturals here)

  4. 1 tsp baking powder

  5. 1/2 tsp baking soda

  6. 1/4 tsp salt

  7. 1/2 cup whole organic milk

  8. 1/2 cup strong brewed organic coffee, at room temperature

  9. 1/2 cup 1 stick unsalted local butter, softened

  10. 1/2 cup organic granulated sugar

  11. 1/2 cup organic firmly packed light brown sugar

  12. 1 local large egg, lightly beaten

  13. Chocolate Liqueur Frosting:

  14. 1/2 stick local butter, softened

  15. 1 tsp vanilla extract

  16. 1/3 cup organic cocoa powder

  17. 1 1/4 cup organic confectioner's sugar

  18. 1/4 cup chocolate liqueur

  1. Preheat oven to 350 degrees. Make sure to use nonstick muffin tins so that you don't have to line the tins.

  2. Sift the flour, cocoa powder, baking powder, baking soda, and salt into a bowl.

  3. In a measuring cup, combine the milk and brewed coffee.

  4. In another bowl beat the butter, sugar, brown sugar, and egg until fluffy. This usually takes about 2 minutes . Add the milk and brewed coffee combination.

  5. Add flour very gradually so that it mixes in completely.

  6. Fill the muffin tins about 3/4 of the way full.

  7. Bake for 15 minutes and then check with a toothpick.

  8. Chocolate Liqueur Frosting:

  9. Cream the butter and vanilla extract until fluffy.

  10. Sift together the cocoa powder and sugar in a bowl.

  11. Combine the two and mix completely. Add the liqueur.

  12. Spread atop cooled cupcakes.
