  2. 20 eggs

  3. 1/2 Cup flour

  4. 2 Teaspoons baking powder

  5. 1 Dash salt

  6. 1 Teaspoon dry mustard

  7. 1 1/2 Teaspoons thyme

  8. 32 Ounces cottage cheese

  9. 24 Ounces shredded cheddar cheese

  10. 2 Medium zucchini squash

  11. 2 roasted red bell pepper

  1. In a large mixing bowl, lightly beat the eggs. Add the flour, bakingpowder, salt, mustard and thyme and blend well.

  2. Add the cheeses, chopped bell pepper and the zucchini and mix until justblended.

  3. Spray a large 11 x 17 inch and medium 9 x 9 inch baking dishes withcooking oil and pour in the mixture. Coverand refrigerate overnight. Bake at 400 degrees for 15 minutes and thenreduce heat to 350 degrees and bake for afurther 20 to 30 minutes. Do not overcook.
