  1. 4 egg whites

  2. 6 oz. non fat greek strawberry yogurt

  3. 3/4 cup packed brown sugar

  4. 1 tsp. vanilla extract

  5. 1-1/2 cups bananas, mashed

  6. 2 cups whole wheat flour

  7. 1 tsp. baking soda

  8. 1/2 Tbsp. ground cinnamon

  9. 1 cup strawberries - diced in small pieces

  10. 1/2 tsp. Sea Salt

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease 14 large muffin cups, or line with paper liners.

  2. In a large bowl, whisk together the egg whites, yogurt, brown sugar, vanilla and bananas.

  3. Combine the flour, baking soda, salt and cinnamon; Stir into the banana mixture until moistened. Stir in the strawberries until evenly distributed.

  4. Spoon batter into muffin cups until completely filled.

  5. Bake for 20-25 minutes in the preheated oven, or until the tops of the muffins spring back when pressed lightly. Cool before removing from the muffin tins.
