  1. 1 1/4 lbs 567g / 20oz Ground turkey

  2. 1 cup 62g / 2 1/5oz Corn kernels - fresh or frozen

  3. 1 cup 62g / 2 1/5oz Tomato salsa

  4. 1/2 teaspoon 2 1/2ml Salt

  5. 2 cups 474ml Lettuce - shredded

  6. 2 cups 125g / 4.4oz Ripe tomatoes - sliced (medium)

  7. 1 cup 62g / 2 1/5oz Red onion - sliced (small)

  8. Lime wedges

  9. 1/4 cup 59ml Dairy sour cream

  1. Thaw the corn kernels.

  2. In large non-stick skillet, cook ground turkey and corn, stirring often to break up lumps of meat, until turkey loses its pink color, about 5 minutes.

  3. Drain off excess liquid. Stir in 1/2 cup salsa and salt.

  4. Divide lettuce evenly among 4 dinner plates. Mound hot turkey mixture in center of lettuce.

  5. Garnish with tomato slices, red onion slices and lime wedges.

  6. Top each serving with 1 tablespoon sour cream. Pass remaining 1/2 cup salsa on the side
