  1. Heat oil in medium saucepan at low temperature.

  2. Add onions and garlic, simmer for 5 minutes, then add herbs. Cook for a 2-3 minutes, then add lamb chops.

  3. Turn until they begin to brown. Add water to cover, salt to taste and chopped tomatoes.

  4. Cover and cook at low temperature, checking to ensure sauce does not reduce too much.
