  2. 4 chicken breast halves (about 2 lbs)

  3. 2 Tbsp butter

  4. 1 Slice bacon -- diced

  5. 1 Clove garlic -- minced or pressed

  6. 4 green onions -- thinly sliced

  7. 4 mushrooms -- finely chopped

  8. 1 Stalk celery -- finely chopped

  9. 1 Pkg frozen -- (10 oz) chopped spinach, thawed and well

  10. drained 1/8 Tsp ground nutmeg

  11. 1/2 Tsp salt

  12. 1/2 Tsp freshly ground black pepper

  13. 3 Cups cooked white or brown rice

  14. 1/4 Tsp paprika

  15. 2 Tbsp sherry OR orange juice

  16. 2 Tbsp melted butter

  1. Rinse chicken and pat dry with paper towels.

  2. In heavy skillet, combine the butter, bacon, and garlic. Saute overmedium heat 2 to 5 minutes until bacon is browned.

  3. Add the onions, mushrooms and celery. Saute over medium heat 2 to 3minutes until tender.

  4. Add the spinach. Cook over low heat for 5 minutes. Stir in the nutmeg,salt, pepper and cooked rice. Blend.

  5. Butter a 2-quart shallow baking dish. Turn the rice mixture into it.

  6. Place the chicken breasts with skin side up on top of the rice.

  7. Combine the paprika, sherry or juice, and butter. Drizzle over thechicken to coat evenly.

  8. Bake at 400° for 30 to 35 minutes or until chicken is done.
