  1. 1/2 cup 31g / 1.1oz Flour

  2. 1 teaspoon 5ml Paprika

  3. 1/2 teaspoon 2 1/2ml Salt

  4. 1/4 teaspoon 1 1/3ml Freshly-ground black pepper

  6. Parsley

  7. 2 Eggs - beaten

  8. 1 cup 237ml Instant potato flakes

  9. Oil - for frying

  10. 1 1/2 lbs 681g / 24oz Walleye fillets

  1. Combine flour and seasonings in a shallow bowl. Put potato flakes on a plate. Dredge filets in the flour mixture, then dip in eggs, then roll in potato flakes.

  2. Heat about 1/2 inch of oil in a large skillet. Fry fillets a couple minutes per side, until golden-brown, and drain on paper towel covered plate. Serve with lemon wedges or tartar sauce.
