  1. 2 corn or flour tortillas

  2. 1 cup shredded melting cheese (such as Mexican, cheddar , Monterrey Jack )

  3. 1/2 cup cooked and chopped chicken breast

  1. Spread cheese and chicken over one tortilla, and then cover with the other. Place in a heated non-stick skillet over moderately low heat, or in a panini pan, for several minutes to melt cheese.
