  1. 3/4 cup all-purpose flour

  2. 3/4 cup yellow cornmeal

  3. 1 tablespoon granulated sugar

  4. 2 teaspoons baking powder

  5. 1 teaspoon baking soda

  6. 1/2 teaspoon salt

  7. 1 large egg

  8. 1 cup buttermilk

  9. 1/4 cup butter, melted

  1. Preheat oven to 400°F (205°C). Grease muffin tins or line with paper cups.

  2. Combine flour, cornmeal, sugar, baking powder, baking soda and salt in a bowl. Mix with a fork.

  3. In another bowl, whisk egg until smooth. Whisk in buttermilk and melted butter to combine. Pour into flour mixture and stir until evenly moistened.

  4. Fill muffin cups three-quarters full and bake 15 to 20 minutes, or until a tester comes out clean.
