  1. 1/2 cup 99g / 3 1/2oz Unsalted butter - (1 stick) - softened

  2. 8 oz 227g Coarsely-grated cheddar cheese - (2 cups)

  3. 1 oz 28g Egg yolk (large)

  4. 1/2 teaspoon 2 1/2ml Salt

  5. 1/2 teaspoon 2 1/2ml Cayenne

  6. 2/3 cup 41g / 1.4oz All-purpose flour

  7. 2/3 cup 97g / 3.4oz Pecans - finely chopped

  1. Preheat oven to 350 degrees.

  2. Beat together butter and cheddar in a bowl with an electric mixer until smooth, then beat in remaining ingredients.

  3. Roll rounded teaspoons of dough into balls and arrange 3 inches apart on buttered baking sheets. Flatten each ball into a 1 1/2-inch disk and bake in batches in middle of oven until golden, 15 to 18 minutes.

  4. This recipe yields about 50 crackers.
