  2. 1 onion, chopped

  3. 2 stalks celery, minced

  4. 2 cups peeled and finely diced carrots

  5. 1 cup peeled and finely diced potatoes

  6. 1-1/2 cups canned lentils, rinsed and drained

  7. 375 mL

  8. 2 cups vegetable or chicken stock

  9. 500 mL

  10. 1 cup milk

  11. 250 mL

  12. 2 tsp curry paste or powder

  13. 10 mL

  14. salt and freshly ground pepper

  15. 1/3 lb plain or jalapeno-flavoured Canadian Havarti, cubed

  16. 2 tbsp coarsely chopped fresh coriander

  17. 30 mL
