  1. 1 tablespoon olive oil

  2. 1 onion, chopped

  3. 1 clove garlic, chopped

  4. 1 teaspoon ground cumin

  5. 1 knob fresh root ginger, chopped

  6. 2 teaspoons chillies, chopped

  7. 400g minced chicken breast

  8. 1 tablespoon coriander, chopped

  9. 1 egg

  10. 50g bread crumbs

  11. Salt and pepper

  12. Touch of flour

  13. 100g kidderton ash goat's cheese or other firm goat's cheese

  14. Touch of olive oil

  15. Toasted sesame bagels

  16. 2 tablespoon mango chutney

  17. Few rocket leaves

  18. Squeeze fresh lime

  1. Heat the olive oil and sweat the onion, garlic, cumin, ginger and chillies together until softened.

  2. Stir into the minced chicken and add the chopped coriander, egg, bread crumbs and salt and pepper.

  3. Flour a chopping board Shape into 8 small rounds and insert a slice of goat’s cheese in the centre of each, refrigerate until needed. When ready to serve, drizzle the burgers with a touch of olive oil and BBQ until cooked through.

  4. Serve on toasted bagels smeared with mango chutney, topped with rocket leaves and drizzled with fresh lime.
