  1. 1 tablespoon oil for greasing pan

  2. 1/4 cup (1/2 stick) butter

  3. 1/4 cup all-purpose flour

  4. 1 1/2 cups finely chopped celery

  5. 1 cup finely chopped onion

  6. 1/2 cup finely chopped green bell pepper

  7. 1 1/2 teaspoons paprika

  8. 1 teaspoon salt

  9. 1/2 teaspoon white pepper

  10. 2 cups whole milk

  11. 1 pound fresh crab, 16-ounces top-quality canned crab, drained

  12. 1 cup sliced green onion

  13. 1 cup chopped fresh parsley

  14. 1 1/2 cups grated cheddar cheese

  1. Preheat the oven to 350ºF. Grease an 9x13-inch baking pan with the oil.

  2. Melt the butter in a heavy skillet over medium heat and add the flour.

  3. Cook for 5 minutes, stirring constantly. Add the celery, onion, bellpepper, and spices and cook for 5 minutes, stirring often.

  4. Add the milk and bring to a boil, whisking constantly. Reduce heat to lowand gently simmer for 5 minutes, whisking constantly.

  5. Remove from heat, and stir in the crab, green onions, and parsley. Placein the prepared pan, and sprinkle with cheese, and bake for 25 minutes.

  6. Bake for 25 minutes. __
