  3. 1 Tablespoon unsalted butter

  4. 1/3 Cup white sugar

  5. 1/2 Cup chopped walnuts

  6. Batter

  7. 1 1/3 Cups brown sugar - packed firmly

  8. 2/3 Cup oil

  9. 1 egg

  10. 1 Cup sour cream

  11. 1/4 Cup water

  12. 1 Teaspoon vanilla

  13. zest of one orange - grated finely

  14. 2 1/2 Cups flour

  15. 1 Teaspoon baking soda

  16. 1 Pinch salt

  17. 1/2 Teaspoon cinnamon

  18. 1 1/2 generous cups coarsely chopped fresh or frozen cranberries

  1. Preheat oven to 350 F. Lightly grease a 9 by 13 inch baking pan.

  2. Prepare topping by coarsely mixing ingredients. Set aside.

  3. For batter, blend brown sugar and oil. Mix in egg, sour cream, water andvanilla. In a separate bowl, mix zest and dry ingredients together. Stirintobatter. Add berries and blend by hand. Turn batter out into pan. Sprinkle ontopping. Bake until cake tests done (35-45 minute).

  4. Serve warm or at room temperature.
