  1. 16 oz 454g Italian plum tomatoes

  2. 1/3 cup 78ml Dry white wine

  3. 1 cup 62g / 2 1/5oz Onion - chopped (small)

  4. 1 cup 237ml Green pepper - seeded and (small)

  5. Chopped 2 Garlic - minced

  6. 1 Bay leaf

  7. 1/2 teaspoon 2 1/2ml Fennel seeds - crushed

  8. 1 teaspoon 5ml Dried oregano - crushed

  9. 1/2 teaspoon 2 1/2ml Ground coriander

  10. 1/4 teaspoon 1 1/3ml Ground cinnamon

  11. 1/2 teaspoon 2 1/2ml Crushed red pepper

  12. 2 lbs 908g / 32oz Broiler chicken - cut into ¥

  13. 1 With skin

  14. And fat removed or two

  15. 1 Chicken breasts

  16. Halved - with skin and fat

  17. Removed

  18. 1/2 Lemon - juice of

  19. 1 teaspoon 5ml Salt-free vegetable

  20. Seasoning

  1. Place tomatoes in small saucepan. Add all remaining ingredients except chicken, lemon juice, and vegetable seasoning. Cover and simmer for 5 minutes.

  2. Season chicken with lemon juice and vegetable seasoning and broil on both sides until lightly browned.

  3. Arrange chicken pieces in baking dish sprayed with nonstick cooking spray. Pour sauce over chicken.

  4. Cover and bake in preheated 350F oven for 45 minutes, or until tender. Remove bay leaf.

  5. Serving suggestions: Serve with spaghetti and steamed vegetables such as zucchini, green beans, or peas and carrots.
