  1. 4 chicken breasts

  2. For the Marinade:

  3. 1 clove garlic, finely chopped

  4. 1 cm/1/2in ginger, finely chopped

  5. 1 tsp ground cumin

  6. 1 tsp ground coriander

  7. 1 tsp ground turmeric

  8. 1/2 tsp ground chili pepper

  9. 1/2 tsp salt

  10. a pinch of black pepper

  11. 2/3 cup/

  12. 150ml/5fl oz soy yoghurt

  13. 2 Tbsp chopped fresh coriander

  14. 1 Tbsp sunflower oil

  15. Basmati rice, to serve

  1. Method :

  2. Score the chicken breasts in a criss-cross pattern with a knife to increase the absorption of the marinade.

  3. Mix the garlic, ginger, cumin, coriander, turmeric, chili pepper, salt, pepper, yoghurt and coriander together in a dish and marinate the chicken for at least 1 hour. The longer you marinate the chicken, the better it will taste.

  4. Heat the oil in a frying pan, and fry the chicken for about 5 minutes on each side or untilcooked.

  5. Add the rest of the marinade and fry for 2 to 3 more minutes. Serve with Basmati rice.
