  1. 2lbs ground meat (1lb of beef , then another 1lb of any of the following: more beef :), venison , elk, bison, pork , even chicken or turkey would probably work)

  2. 2 eggs

  3. 1 cup fine breadcrumbs

  4. 2T dry minced onion or 1/4 cup grated fresh onion

  5. 2 cups cheese , shredded(colby, cojack, cheddar, etc)

  6. 4oz can tomato sauce , divided

  7. 1T Dijon mustard

  8. 1/4 cup beef stock

  9. 3t worcestershire sauce

  10. 1/2t liquid smoke

  11. your favorite season salt blend, or kosher salt , and fresh ground black pepper

  12. For Optional Glaze

  13. 2oz tomato sauce

  14. 2t Dijon mustard

  15. 1T honey

  16. 1t cayenne pepper

  17. 1t of worcestershire sauce

  18. 1t red wine vinegar or fresh lemon juice

  19. 1/4t liquid smoke

  1. In large bowl combine all meatloaf ingredients, using half the can of tomato sauce, or 2oz. Alton Brown, I believe our hands are the best kitchen tools, so I recommend using them to mix this well! :) See Photo Form into 6-8 mini loaves and place on cooling rack(lightly sprayed with no stick spray) over cookie sheet.(cover bottom of cooking sheet with aluminum foil, if desired, for easier clean up) See Photo Bake at 350 for about 40-50 minutes until done.

  2. For Optional Glaze Combine all glaze ingredients in medium bowl.

  3. Spoon or brush over meat loaves at about 20 minutes into cooking. See Photo
