  1. 1-1/4 cups all-purpose flour

  2. 3/4 cup cornmeal

  3. 2 tablespoons sugar

  4. 3 teaspoons baking powder

  5. 1 teaspoon salt

  6. 1 egg

  7. 1 cup milk

  8. 1/4 cup butter, melted

  9. 1 medium carrot, shredded

  10. 1/3 cup chopped green pepper

  1. Confetti Corn Muffins Recipe photo by Taste of Home In a large bowl, combine flour, cornmeal, sugar, baking powder and salt. In another bowl, combine egg, milk and butter; stir into dry ingredients just until moistened. Fold in carrot and green pepper.

  2. Fill greased or paper-lined muffin cups two-thirds full. Bake at 425° for 14-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Yield: 1 dozen.
